Mozzarella di Bufala (buffalo mozzarella)
Its name derives from the Italian verb “mozzare” (to chop), relating to the activity undertaken by the dairyman.
The term was actually coined to indicate how mozzarella is made, that is, by manually chopping the mixture of cheese into small parts.
The title “Mozzarella di Bufala” was recognised at national level in 1993 when it was assigned with the D.O.C. (Denomination of Controlled Origin) mark, and in 1996, at European level, with the D.O.P. (Denomination of Protected Origin) mark.
